In addition to our wheat cookies, Aunt Gussie's offers nutritious Spelt cookies and biscuits as an alternative to consumers sensitive to wheat.
Spelt is an ancient grain that has a rich, nutty flavor. It is a superb source of fiber with high water solubility, allowing its nutrients to be more easily absorbed than common wheat. Our Spelt Sugar Free varieties are for those cookie lovers who can’t have sugar such as diabetics or those watching over their sugar intake. Now you can indulge in delicious tasting cookies, with the wholesome benefits of Spelt.

What is Spelt Flour?
Popular in Europe for centuries, Spelt is used in a wide variety of cereals, pastas, crackers, baked goods, and beers. The ancient Romans knew it as "farrum", Italians now call it "farro"; today's Germans know it as "dinkle." Spelt's uniqueness is derived from its genetic makeup and nutrition profile. Spelt has high water solubility, so the nutrients are easily absorbed by the body. Spelt contains special carbohydrates (Mucopolysaccharides) which are an important factor in blood clotting and stimulating the body's immune system. It is also a superb fiber resource and has large amounts of B complex vitamins. Total protein content is about 10% greater than the common varieties of commercial wheat.

What is Maltitol?
Maltitol is an all-natural sweetener, member of a family of bulk sweeteners known as polyols or sugar alcohols. It has a pleasant sweet taste--remarkably similar to sucrose. Maltitol is about 90% as sweet as sugar, non-cariogenic, and significantly reduced in calories. There are many advantages in using maltitol over regular sugar and the safety of maltitol has been proven and approved by the U.S. Food and Drug Administration, UN World Health Organization, and EU’s Scientific Committee for Food.

What is meant by No Sugar Added?
The term No Sugar Added describes some of our cookies and crackers (such as raisin almond biscuits, cranberry orange biscuits, and cinnamon raisin crackers) that contain natural sugars from their natural ingredients such as raisins, oranges, and unsweetened apple juice. Aunt Gussie's does not add any sugar to these products, thus the name No Sugar Added. Appropriately, Aunt Gussie's does not make the Sugar-Free claim because of the natural sugars that are included in the nutrition facts of all the items.

What is Organic Palm Shortening?
The Natural Organic Shortening we use, starts with organic palm oil, extracted via manual pressing without the use of harmful chemicals. The oil is refined using a certified organic, chemical free process. The palm oil is then whipped using nitrogen, resulting in creamy consistency similar to conventional shortening.
